Ris“oat”to

Oatmeal for dinner? You bet!

INGREDIENTS:

  • 4 cups chicken or turkey stock
  • 1 cup steel cut oats
  • 1 tsp garlic powder (or more to taste)
  • ½ tsp dry basil or Italian seasoning mix
  • 1 cup frozen chopped spinach
  • ½ cup sun dried tomatoes, sliced
  • ¼ cup pine nuts
  • Parmesan cheese
  • Salt to taste (optional)

In a medium saucepan, bring stock to a boil. Stir in oatmeal, garlic powder, and basil/Italian seasoning. Reduce heat to low and simmer, stirring frequently, until oats are tender and most of the stock has been absorbed (approximately 20 minutes). Stir in frozen spinach and sun dried tomatoes, and simmer until tomatoes are rehydrated and spinach is warm (only a few minutes). Add salt to taste, if desired. Dish into bowls, and top with pine nuts and parmesan.

(This is a fun, healthier alternative to rice or pasta. You can mix up the add-ins depending on what ingredients you have in your pantry, or what leftovers you want to get rid of. This is one of my favorite variations, but you can use any veggie you like, and add cooked chicken or sausage for an even heartier meal.)
